Simple But Luxurious Salmon
This is the perfect meal to cook for your loved ones or friends as it feels a little luxurious but is perfectly balanced. Its ready in under 15 minutes and requires barely any ingredients! Its important to eat 1-2 portions of oily fish like salmon a week in order to get our essential Omega-3 fatty acids. We need them to function and our body can’t make them by itself, so including them in your diet is key.
Ingredients for 2: Salmon fillets, 1 leek, 1 stick of celery, 50g butter, stock (veg or chicken), table spoon of creme fraiche or sour cream, lemon.
Remove the skin off the salmon and add salt all over. This helps firm up the fish a little. Set to one side.
Finely chop the leeks. Chop the celery into fine dice (you dont want big chunks of this!). Add to a pan with a little knob of butter or olive oil.
Sweat this down for 2 mins then add in a tiny amount of stock (around 100ml). Don't add too much! Place lid on the pan and cook for 6 mins.
Take salmon and cook in oiled frying pan until golden on the bottom.
Add a knob of butter and a smashed garlic clove and spoon the melted garlic butter on the heat over the salmon until the uncooked side turns pale pink.
Flip the salmon over and leave to rest off the heat.
Take lid off your leaks and increase the heat to reduce your stock down. Once it's the right consistency add a little lemon, parsley or chives and creme fraiche.
Serve with a side of green beans or tender stem broccoli (glass of wine optional!)
